Quince jelly

I got about 2kg of quince from one of my neighbours and this is how I made quince jelly from it. 

ingredients: 

2kg Quince

500g of sugar for 600ml of quince juice

Juice of one lemon


Wash them


Cut them into chunks

Simmer them in water until they are soft enough to pulp them, takes about 1.5 hours

Traditionally people would hang the pulp in a muslin cloth over night so that all the juice drips into another recipient, I have a fruit press so I've used that to squeeze out as much juice as I can.

 


Mix the sugar and quince juice with the juice of one lemon and start reducing on the hob.

The juice will turn a reddish colour the longer it is on the hob


Keep reducing the juice until it becomes thick enough to create a skin on a white plate when you push it with your nail.

Sterilise your containers in the oven or dishwasher and bottle it up.
